Chicken Enchiladas

Green Enchilada sauce (large can)
Grated cheese
Mexican or Spanish rice (read the box before you buy and make sure it’s not the one that you have to add tomatoes)
Black Beans
2 chicken breasts
Flour or corn tortillas

Pre-heat oven to 350
Make the rice in the microwave, (the recipe will be on the box)
Cut the chicken into chunks and fry on stove
Get big bowls for the beans, sauce and cheese

Empty 1/3 of the sauce in the bottom of 9 X 11 cake pan

Dip the tortillas in the sauce
Add chicken, cheese, beans, rice, then roll up and place in cake pan
(very messy)

Pour remaining ingredients over the top of the enchiladas

Cook for about  10 or 15 minutes
